The speed round will require the competitor to make six (6) drinks and open one (1) beer as accurately and quickly as possible. The six (6) drinks for this round will derive from the Master Drink List. The competitor will draw a list from the bucket and hand it to the judge. There will be several drink lists to draw from and the lists will be returned to the draw for the next competitor. Several new drink lists will be created for finals with the same layout as qualifiers, however it will still be a blind speed round.

The competitors will be read and presented the drink list by the MC or Judge. The round starts when the MC or Judge says, "GO". The list will be placed in front of the competitor for them to refer back to if needed. When the competitor is finished with their speed round they must raise their hands to signal the clock to be stopped. Once they signal the clock to be stopped, it cannot be started again and any adjustment to the drinks will award the competitor a 30 second penalty.

Competitors may not have anything in their hands when the Judge says go or after time is called. Competitors will be penalized for each object in their hands prior to go or remaining in their hands when time is called. - see below.

All bottles must remain standing upright after time is called. Each bottle that is not standing upright will result in a penalty. - see below.

Each drink list will consist of the following types of drinks:
(1) Frozen
(1) Multi Liquor Collins
(1) Multi Liquor Rocks
(2) Highballs/Mixed Drinks
(1) Chilled Shooter
(1) Beer

The cordial bottle that is used in the making of the Multi Liquor Rocks MUST BE FLIPPED INTO A POUR. Just as in the Pour-test round, the bottle must be caught in the pouring motion. It can not be caught then turned or carried into the pour. Not flipping this bottle into a pour will result in a penalty - see below.

Competitors MUST perform/attempt two (2) catches behind their backs with any bottle(s) they are using in the building of the drinks. The bottle may be thrown with a flat or rotate, that is up to the competitor, BUT if the bottle spills it will count as a SPILL deduction. If the bottle is dropped, as long as they pick it up it will not count as a DROP deduction. Not performing these throws will result in a penalty. see below.

The beer must be opened with a bottle opener (not twisted off) and placed anywhere on the bar top. Not opening the beer with an opener will result in a penalty. - see below. The bottle opener may NOT end up on the floor, ice bin for drinks, or the ice bin for beer. This will result in a DROP penalty. - see below. Anywhere else is acceptable. The beer does NOT need to be poured. Any beer spills will be treated the same as a liqour spill.

You MAY use your own music for the speed round. HOWEVER, if there is a problem with your music for any reason at the start of your round, you MUST CONTINUE ON. You may not stop your speed round due to a music issue. If you do not bring your own music, high-energy music will be played by the MC/DJ for you.

Juices and bottles must be replaced to the area they came from. They do not have to go back exactly in the same place or holder as they were pulled from, but they must be returned to the same area. Bottles from the well go back in the well, bottles removed from the back bar must be returned to the back bar and juices must be returned to the juice holders. Bottles that go on the back bar, must be returned to the riser. They may NOT be put on the table. The bottles do not have to go on the exact spot from the riser they were pulled from as long as they are on the riser.

There will only be one (1) row of bottles on the back bar riser. (see Schematic) They will be on the first row of the riser and the edge of the riser will be approximately one (1) inch from the front edge of the table.

Two barbacks will be assigned to the bar to ensure efficiency as well as time management. Barbacks are only responsible for the cleaning & initial setup of the bar. Barbacks will only assist you when you need a replacement liquor bottle or tin or bar object. They will not do any coaching what so ever. SETTING UP THE BAR IS THE COMPETITORS RESPONSIBILITY. If the bar is missing ANYTHING, it is the competitor's sole responsibility.

Competitors MAY rearrange BOTTLES IN THE WELL, JUICES & SODAS. Bottles in the well may be put into any order that the competitors choose, as long as they remain in the well. Juices may be put in any order the competitor chooses as long as they remain within the juice holders. Sodas must remain on the lower bar in the same area they are in the schematic, but may be put into any order the competitor chooses. Competitors are solely responsible for the set-up of the front bar bottles and the juices and sodas.

Unlike the Pour Test Round, competitors MAY NOT rearrange the BACKBAR in any way. Barbacks will re-set the backbar exactly the same for every competitor. Competitors must inspect the bars to ensure correctness. Once the bar is turned over to the competitor, it then becomes the bartender's responsibility.

Competitors MAY NOT rearrange GLASSWARE. Glassware may be pushed closer together, but the order may not be switched.

Competitors may also flag ALL bottles (point the pour spouts) in any direction they wish.

Tins must remain face down on bar top and must remain in the same area they are in the schematic. The order of the large tins and the small tins MAY be reversed from the schematic. Competitors may switch out large tins for small tins, or vice-versa, but may NOT add or remove tins from the bartop.

The Ice Scoop must be in the ice bin and the HANDLE MUST BE UP. The ICE SCOOP IS ONLY OBJECT THAT MAY START OR END in the ice bin. NO tins may start or end in the ice bin. If a competitor chooses to scoop ice with a tin, it must end up on the upper or lower bar or the back bar only. Any where else will result in an Item Not Returned Penalty. see below.

Competitors may only scoop ice with either a tin or a ice scoop. Competitors may NOT use glasses, hands or anything else to scoop ice with. This will fall under the UNSANITARY PROCEDURE penalty. - see below.

Pour spouts will be Spill Stop #285-50 and may not be substituted. The speed round is more difficult to judge for accuracy as the only way to judge it is by the experienced judges eye. Thus the industry standard Spill Stop #285-50 must be used by all competitors in the speed round.

Garnishes MAY NOT be setup in any way. They MAY NOT be adjusted toward the edge of the garnish tray to make them easier to grab. The garnish trays MAY be slid closer to the bartender, but MAY NOT be moved to a different position on the bar top.

The blender top may start anywhere on the back bar that the competitor chooses, right side up or upside down, or on top of the blender cup. The blender top and cup may end up on the upper or lower areas of the front bar, or the back bar.

Drinks that require a Large Straw may only have one (1) Large Straw in them when time is called. Drinks that require a Short Straw may have either one (1) or two (2) Short Straws, but you must be consistent with all of your drinks.

There will be a minimum of two stopwatches activated for each competitor to eliminate discrepancies.

All completed drinks and beers must be placed on the bar top. Any drink not on the bar top when time is called will be considered a MISSING DRINK - see below.

There will be NO bottle tossing off to the barbacks.

Competitors will be given one bottle of each liquor required in the drink list. These bottles will be set between 1/2 and 3/4 full. Barbacks will have a full set of back-up bottles in cases of breakage. ***Competitors may use their own bottles for this round as long as they are the same product as those listed on the PRODUCT LIST. If a liquor brand is not listed, then competitors may use ANY brand they would like, as long as it is the correct type of liquor and is in its original packaging. Competitors must have these bottles set and ready to go and must give them to the barbacks prior to being given their bar.

Time will be added for each mistake. Time will be adjusted, and then points will be distributed on a sliding scale. Each one (1) second is worth 2pts.

The Speed Scale for the speed round will have a base of 60 seconds. An adjusted score of 60 seconds will be a full score of 300. The scale will continue above 300 points if the competitor goes below 60 seconds.

For example, if a competitor has a time of 87 seconds (unadjusted time) and has penalties that total 15 seconds, they will end up with an adjusted time of 102 seconds. The difference between the base time of 60 seconds and the bartenders adjusted time of 102 seconds would then be multiplied by 2 (2 points per second) giving the competitor the total deduction. (42 x 2 = 84) That is taken away from the perfect score giving the bartender their total speed score (300 - 84 = 216).

The competitor will only be penalized once for each mistake. If the wrong garnish is put in a drink, the competitor will not be penalized for both having the wrong garnish and missing the right one.
BONUSES

Competitors will receive a 5-point bonus for each time the competitor flips a tin and catches it behind their back. This must be a tin that is either going to be, or already has been, used in the making of a drink. The tin must rotate AT LEAST one FULL rotation. Competitors may receive up to two (2) of these bonuses within their round. If you miss a tin, you will not be penalized for a drop as long as you pick the tin up.

Bartenders will receive a 5-point bonus for zero mistakes in the speed round.
